Our chef is a very talented one: we are very sorry the evening you had the dinner something has gone not in a perfect way, it may happen to humans. Usually Alessandro’s dishes are very appreciated; next time, please, try the “Baccalà in umido con datterino olive nere, capperi “: it is salted codfish from Norway, cooked in a typical Mediterranean style. By the way: do you know that most of Norwegian cod is exported to Italy ? For an historical tradition, we like so much this fish grown in the cold Artic ocean, so far from our warm, Mediterranean water. It is preserved using salt, so you have the “ Baccalà”, or just drying it on the dry Norwegian winters and it becomes “ Stoccafisso” or “Stockfish”, because it is hard as stick ( it is dehydrated); in both cases, our chefs put it in a pot with flushing fresh water for a few days, until the salt is gone, or the flesh is soft again. Baccalà: a perfect marriage between Norway and Italy. Try it….. You know, food is the main subject in Italian brains, even more important than football (for men). That’s why Italy is by far the best place in the world for food (and wine). Dear Mr. Claude, please come back soon again and enjoy that dish: you will not be let down! Il faut dire que les hôtels du centre historique de Rome n'ont presque jamais des grandes pièces, car ils sont placés dans des bâtiments historiques, comme par exemple, les hôtels dans le centre de Paris. Nous sommes désolés que Vous avez demandé plus de savon, et que Vous n’avez pas trouvé les mouchoirs, mais ils étaient dans le petit sac transparent, avec le bonnet de douche, le set de toilette et les coton-tiges. Nous sommes intervenus vers le bar ci-dessous et ils ont déjà pris des mesures. Nous sommes d'accord avec Vous en disant qu'il serait très agréable d'avoir une piscine ou un Spa dans l'hôtel Singer Palace , mais il n’y a pas d’hôtel dans le centre historique de Rome avec une piscine, et il n’y a que peu d’ hôtels qui ont un petit Spa : l'avantage d'être situé dans le cœur du centre historique est cependant inestimable ....
